If production is standardized than how can people recieve products that are not widely popular?

If I like Cookie X but most people like Cookie Y how can a Technate economicly send Cookie X to my home. Cookie X might only come from a small bakery in my area (before the technate).

Of course the majority of the population might like Cookie Y, but many will not.

If I lose my ability to buy Cookie X, along with many other products, than is this not a loss of freedom?

Even if cookie X is produced only .005% of the population will buy it, so it will be wastefull to produce Cookie X.

Please explain how the problem of non-popular product production is solved.
