There's one crime only (apart from high treason perhaps) I would like to see the death penalty for:

Throwing acid at people.

Another thought: If there is death penalty on the books for a crime, how about requiring a higher standard of proof (otherwise life in prison)?

It's not difficult to define "reasonable doubt +1".

Additional corroborating witness.

Additional corroborating physical evidence.

Or you could require generally that a conviction be redundantly beyond a reasonable doubt, such that if any single witness or any single piece of evidence later found unreliable would not prevent a safe conviction.
