The fish was used exclusively in early Christianity. The cross as a crucifix wasn't used until well into Roman Christianity (5th century is the earliest appearance, and it is +, not t). Fish and fishermen are recurrent in scripture, and early leaders were referred to as fishermen.
Of course, most modern Americans don't know that, though they are aware of the fish. The cross symbol is seen by most people, in my experience, as a symbol of Christ's sacrifice. This has come, for many people, to actually be the main role of Jesus - the dying for our sins, instead of the actual preaching of Jesus.
Do you think that the focus on crucification and the symbol of the cross are something that has taken over modern (American, protestant) Christianity?
